This Praline Pecan Crunch doesn't look like much... but it is DELICIOUS. It's so delicious I thought I'd go ahead and share the recipe...
Praline Pecan Crunch
Prep time 10 min Bake time 1 hour
- 8 cups Original or Cinnamon Quaker Oatmeal Squares cereal (Cinnamon one is hard to find) ( 1 16 ox box ) If you use original or brown sugar squares, put some cinnamon in the mixture you microwave.I Personally use 4 cups of Cinnamon Life and 4 cups of Cinnamon Quaker Oatmeal Squares. The oatmeal squares are SUPER crunchy and the life helps balance it out.... plus if you do it my way - you have enough for 2 batches!
- 2 cups pecans ( whole or pieces )
- 1/2 cup light corn syrup
- 1/2 cup firmly packed brown sugar
- 1/4 cup butter ( 1/2 stick )
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
Heat oven to 250 degrees.
Prepare a 13" X 9" pan. I do one light spritz of Pam and then smear it around good with a paper towel.
Combine cereal and pecans in a large bowl set aside.
Combine corn syrup, brown sugar and butter in a 2 cup microwaveable bowl. Microwave on high for 1 1/2 minutes, stir.
Microwave 1/2 to 1 1/2 minutes more or until boiling.Stir in vanilla and baking soda and pour over cereal mixture, stir to coat evenly.
Place mixture into the prepared 13" X 9" pan.
Bake 1 hour - stirring every 20 minutes. Spread on baking sheet to cool.
